The modules on the Higher National Diploma in Kitchen Management will enable you to gain a comprehensive understanding of culinary management, learning how to organise production, lead teams, manage procurement, monitor food quality and safety, and coordinate catering services. Online dual vocational training:
In accordance with Organic Law 3/2022, a number of significant changes will be introduced to the vocational training system in Spain from the 2024–25 academic year onwards
This transition to the new vocational training regulations, known as ‘Dual’ (a standardised framework for the whole country, except for the order of modules and the teaching load set by each Autonomous Community) affects all first-year courses in any of their formats (face-to-face or online), except for the Higher Vocational Training Course in Dietetics, which remains under the LOGSE training plan, predating the current LOE*

The Higher National Diploma in Kitchen Management prepares you to organise, manage and supervise culinary processes, work teams and catering services. You will learn about food production, procurement, quality, food safety, gastronomy, nutrition and kitchen management.

The FFE programme takes place at partner companies and organisations in the gastronomy, hospitality and catering sectors. UAX has a network of over 8,800 partnership agreements, including partner companies such as Grupo Iberostar, NH Hoteles, Paradores and Can Roca, amongst others.
The Advanced Diploma in Kitchen Management prepares you for a career in restaurants, hotels, catering companies, institutional catering and other food service sectors. You will be able to take on roles such as chef, station chef, sous-chef, head of culinary production, store and larder manager, or catering operations manager, amongst others.
You’ll be able to pursue a career in restaurants, hotels, catering companies, institutional catering, central kitchens, restaurant groups and food and beverage departments.
An official Higher-Level Vocational Training course leads to a qualification that is officially recognised throughout Spain. By contrast, an online cookery course offers specific training but does not lead to an official vocational training qualification.
Whilst the Cooking and Gastronomy course focuses primarily on culinary preparation, the distance-learning Higher National Diploma in Kitchen Management prepares you to organise, manage and supervise professional kitchens. As well as honing your technical skills, you will develop expertise in team management, culinary production, procurement, food quality and safety, enabling you to advance your career within the catering sector.
